From Seed to Table

We have to democratize nutrition and flavor.

Dan Barber Chef and Co-Owner of Blue Hill and Blue Hill at Stone Barns

Start with the right seed, and you can grow healthy, delicious food while protecting the environment and safeguarding nutrient-rich soil. But today, just four industries control 50% of the global seed market, and that concentrated control results in a dramatic loss of quality, taste, and nutrition. Recognizing that the future of food rests with the nature of the seeds, chef Dan Barber is spearheading a breeding initiative to make flavor, not just shelf life, a priority. The goal is to scale up seed production, allowing farmers to grow exceptionally nutritious fruits and vegetables that are also affordable and widely available to consumers.
